"I like you" - IOI or LJBF

Went on a date with a lady banker that I met on a dating site. We met up for drinks and hit it off, about halfway through she said: "I like everything; I like my job, I liked my college, I like this restaurant, I like you" - is this an indication of interest or a LJBF?

Yes, thats an IOI, my discerning friend.
If she had said "I don't like you", that would not be an IOI.
Also, if she had said lets just be friends, then that would mean she has LJBF you.

IOIs are not always accurate. IODs always are accurate. If things look good, go for it! The time you're wasting wondering whether this girl is into you or not is time you could be using to get attraction up and then get a date!

Her saying "I like you" sounds more like a sh*t test than anything.

She was most likely testing you to see if you would crumble and goo and gush your feelings over her, or if you'd play it cool, or better yet not even really react.
