Veggies should still be crunchy after cooking

My nutrition proffesser said veggies should still be crunchy after cooking, otherwise they lose some of their nutritional value. So don't cook em too much.

Anyway....this is very true...apparently if you boil your vegies then all the nutrients go out into the water in and if you pour the damn water down the sink then you lose all the damn nutrients. True fact.
So i suggest steaming them...or even better, eat them raw (maybe not the case with broccholi but certainly with carrots). on the subject of carrots, dont peel them cause most of the nutrients are in the peels ;)

Same with potatoes, except for the carbs.
