This is the correct answer imo, the fact she's still texting means she hasn't written you off. There's nothing wrong with doing what marmel suggested, just tell her to make it up to you by coming over and cooking you a meal or something.

I honestly don't even see a problem with telling her to meet you somewhere either. If she wasn't interested, she wouldn't still be apologetically texting you.

OP use common sense if after 2 attempts shes still contacting you like your partners but shes flaked on two dates...kick her to the kerb
