If she already knows, it sounds like some kind of insecure girl thing. Just say something funny to brush it off and keep things from getting too much of a serious tone, like:
Her: How many girls are you seeing?
You: More than you.
Then you can accuse her of being a lesbian and make her prove to you that she's straight. I'm sure you can think of a few good tests...

Say it all in a way that suggests you're seeing other girls and the ones in your story were false and made-up and you aren't serious about any of the girls that you are seeing - which includes her.
That way you're up-front and you're being a little fun about it, while not really answering her question......... great eh!

Or you could do what DeAngelo has suggested.. as I remember.. "you know, I believe relationships get screwed up soooo many times because people rush in before knowing each other... I don't want that with you."
For full disclosure, I'm not a player.. but, if I haven't made a committment, she is being disrespectful to hold me to one. How many girls I'm seeing is no more her business than it is for any guy friend I hang out with. Now, don't be harsh with her, but I wouldn't play along with her implying guilt, when I've been good to her.
