I like the ones that get to the point, and don't overstay their welcome. A few that come to mind are:

Roger MCGuinn (Byrds): "Eight Miles High," and especially "Thoughts and Words" (most frighteningly intense backwards guitar solo I've ever heard)
Dave Davies (Kinks): "I Need You," "Til The End of the Day"
Pete Townshend (Who): "Our Love Was," "Young Man Blues" (London Coliseum, 1969 version on The Kids Are Alright film)
Dave Gregory (XTC): "Ball and Chain" (actually an ensemble w/Andy Partridge, most likely).
Roy Wood (Move): "The Last Thing On My Mind" (brilliant overbubbed ensemble)
Richard Thompson (Fairport Convention): "Poor Will and the Jolly Hangman"
Robert Fripp (w/ Bowie): "Heroes" (w/King Crimson): "Starless" (both nothing in terms of notes, but devastating in terms of musical sense) (w/King Crimson):"Epitaph"
Martin Barre (Jethro Tull): "Aqualung," "With You There To Help Me".

And yeah, Hendrix and Clapton (early on) knew how to jam without too often falling into drawn-out ass-wanking.
