I usually cook up my food a few days in advance for both the sake of convenience and necessity. For veggies, I usually take some mixed veggies, steam them on the stove top, store about three days worth in Ziploc microwaveable bowls, then nuke them for about 30 seconds or so when it's time to eat. I've heard, however, that microwaving veggies can eliminate the nutrients. Admittedly, eating veggies isn't something I enjoy solely for the taste. Anyone know if this is a problem or am I just overworrying? If it is a problem, how do you guys prepare veggies for meals on the go? Just raw?
