Microwaving veggies = bad?

I usually cook up my food a few days in advance for both the sake of convenience and necessity. For veggies, I usually take some mixed veggies, steam them on the stove top, store about three days worth in Ziploc microwaveable bowls, then nuke them for about 30 seconds or so when it's time to eat. I've heard, however, that microwaving veggies can eliminate the nutrients. Admittedly, eating veggies isn't something I enjoy solely for the taste. Anyone know if this is a problem or am I just overworrying? If it is a problem, how do you guys prepare veggies for meals on the go? Just raw?

I have tried to find some studies on microwaving food and how it affects it and haven't found, anything I think. I remember hearing or reading that a microwave just vibrates the water in food so that it heats up, which I couldn't figure would affect any vitamins. Someone here may know something I don't but I wouldn't worry about it. It's probably the worrying that causes the cancer not the microwaves.

when you boil veggies it destroys nutrients. I think that by just warming them up its not doing the same thing. But thats speculation..

if you don't enjoy the taste of veggies try adding: butter and/or olive oil; salt; herbs; freshly ground pepper (you need a peppermill for this -- pre-ground pepper is suitable mainly pranks involving sneezing); etc.

no one has ever demonstrated ill effects of microwaved veggies. there are so-far unsubstantiated claims that microwaves malform proteins. to my knowledge no one has ever presented verifiable evidence of this.

I think it is the flavanoid antioxidant compounds that are somewhat negatively affected by microwaving. These are the same compounds that are suspected to do the good things that broccoli does. It is all theoretical.

If you take a look at how radiation affects anything, it basically destroys the walls of cells. On a cellular level, microwave radiation "melts" foods... There are better ways to cook veggies.

the way I cook them is in a stir fry pot. I brown the meat, then throw in veggies + eggs, and once the egg has cooked, it's all finished. Doing it that way, the veggies aren't cooking for very long, yet they're heated up and they taste good mixed with beef and eggs :)

Add hot sauce, hot peppers, onions, garlic, etc.

I always cook with ev olive oil now, because it provides balance for the saturated fats in the beef and eggs.
On the other side of the coin, when I cook chicken, I always cook with unsalted butter.

Alright, so it seems that microwaving veggies is in fact bad. My main issue here is portability and convenience. I'm a full time student and I work nearly full time hours, so if I'm including veggies in my diet, they need to be included in such a way that's portable, easy access, and in a way that doesn't wipe out the nutrients. Because if that's the case, what's the point? Looks like raw with some spices and lemon juice or something will be the way to go.
