Is it worth my time?

Work with a 28 year old woman Im 42. She gives me signs of interest and backs off, classic hot and cold. She has a boyfriend she is obviously bored with. I have asked her out once, she backed out. I proceeded to blow her off for two weeks. She initiates a conversation telling me she is quitting work and finding another job, giving me her number.
I feel like telling her lets fvck and drop the boyfriend. It's tough because of it being work however, don't need any sexual harassment claims against me, LOL. I'm not too wrapped up in her. There are other women just as good looking and I make sure she sees me with them.
My mindset is to just ignore and be polite but I feel I am not playing this right and could be passing up some great sex. Any recommendations?

It's your workplace. Don't sh!t where you eat, like you said plenty more options out there - go get 'em!

I would say this, "When you get another job give me a call, BUT know that I do not see women who are sleeping with their boyfriends. No triangles for me ".
