how to react to girl apologizing?

I will give you an example of a scenario. This is just an example for you to see what types of situation I am talking about. I come across such situations a lot. I am sure other guys do too. the structure of the situation is like this: the girl apologizes for a situation, then puts herself down.

you see inside a girl's car. she says "sorry it's a mess in here. I am so disorganized"

I have 2 responses and from experience, both lead to a dead end.

If I try to make her feel good by saying "it's ok, it's really not that bad. I am disorganized too" it goes to a dead end. I can't flirt after this. I don't know why, maybe because I start sounding like her gay friend. or maybe because I am not being truthful and people that are not truthful are not sexy.
If I try to put her down "you're right, you're so disorganized, jesus clean up" it makes me sound like a jerk which is even worse than the first response.

so how do I react to such situations? ignore and change subject?
 

What happens, IN HER MIND, is that she comes to see you as WORTHLESS simply because she hasn't had to INVEST anything in you in order to get you or to keep you.

You were an interesting diversion while she had nothing else to do. But now that someone a little more valuable has come along, someone who expects her to treat him very well, she'll have no problem at all dropping you or demoting you to lowly "friendship" status.

For that, I'd say are you messy everywhere with a smirk, pause for a bit and change the subject.
