I know that I need to make a decision, but my mind is just preoccupied with this man. It's all I think about and her manipulation and control tactics are obviously working. Certainly I have a lot to work on myself, when it comes to actually being an alpha. However I just don't know how to get my mind off of it. There are a lot of demands on me right now with school, and I've tried everything from self care (e.g. meditation, going to church, prayer, working out, sleeping, therapy (I have bipolar disorder), etc.).
This is even more evidence that you need to step back. You’re spending all your mental energy trying to figure out this woman and her behavior to the point that you’re questioning your own judgment. Whether she is intentionally manipulating you or not, you’re becoming increasingly consumed by the situation, which could be a byproduct of scarcity mentality or emotional attachment. Stop trying to solve her or the relationship and focus on getting yourself back to a better place. A woman should make your life better, not leave you constantly questioning which direction to take.

Look, as I said before, stay or leave. You could try dread game, which is about rebuilding your life, developing your mission, creating options, and becoming indifferent to whether she stays or goes. However, at the end of the day, judge the situation by its effect on your life. If this relationship is consistently making your life worse, you need create some distance.

I have bipolar and that I'm prone to rumination
The relationship dynamics and your responses here sound like good material to share with your prescribing physician. I have bipolar also, I learned about it a couple of years ago. It’s a crappy uphill battle with yourself realizing how much your depression can play tricks with how you perceive your environment and react to it. I just see a lot of my former mentality in this post, and I suggest you call your doctor and ask him / her for some help getting out of this rut.

This relationship is a toxic cesspool. Why you are still holding on is a question you need to answer introspectively.
