Usually what I do in this situation is look like I'm very hurt emotionally, and a little bit physically (but make it obvious that you are joking) Then as she's apologizing, turn it into her needing to make it up to you. That is, if you're attempting to get something like a kiss or more out of it. Works for me all the time.

laugh it off (in a "i can't believe you just slapped me" kinda way and then with a bit of a condescending tone..... say: "wow... was THAT really necessary? you owe me for that" *sly grin*
