I was talking with this girl, now i'm normally just a really sarcastic joker type... she jokingly says something about me probably not being the most romantic guy, I say something along the lines of "oh, sure I am"... then she puts me on the spot and says "ok, name a few romantic things you've done"...

Luckily I was on the phone and really did have to go so I was saved by the bell, but it really caught me off-guard... whats the best thing to say in that situation? Should I actually be telling her romantic things ive done for other girls in the past?

Soz, used that same line before, mate. That line of yours would have only worked on the really insecure girl. The confident ones would laugh at you and see right through you - see that you're just too insecure yourself to say yes or no.
