I remember reading somewhere, that taking a week off from working out completely, was good for your muscles to recover fully. My question is there any truth in this, and how often should you use this week off? once a month? every 2?

yeah, every 8 weeks take a week off
many workouts are based to be around 8 weeks as well, and then you either change workout or add to your old one

Yes that is at most 8 weeks, you just need to listen to your body, if your still sore or really tired, then dont workout, its more beneficial to rest than workout sometimes. The past couple weeks I have taken lots of time off, because I felt a bit sorer. Be sure however, that you dont mistake actual fatigue for laziness or lack of motivation, you need to learn how to tell the difference.
