Potatoes: Cooked or Raw?

So, I'm on a bulking program. Diesel's Guide to Bulking Up suggests that you eat a potato one hour after a workout. Just from how society views the typical edible potato, I'm assuming that he means a cooked one.

Now, I enjoy raw potatoes more than cooked ones (call me disgusting all you want, but the reality is it's just a fvcking vegetable). Which would be the most beneficial form to eat a potato for the purpose of bulking: cooked or raw?

Rule of thumb would be raw. Cooking can disinegrate alot of the nutrients in any vegetables, not just potatoes. If you actually LIKE raw potatoes, by all means eat them that way. I prefer mine baked.

Cooking doesn't affect caloric content however, just nutrient content, and just a small percentage then. To answer your question, raw is better, if only by a little.

Even if you don't have a problem with the toxic glycoalkaloid compounds in raw potato, you still have to cook your potatoes.

Your body can't digest raw potato - the starch molecules are too large and complex. Cooking breaks them apart into simpler forms that your body can absorb.

I've been doing a bit of research on this, and there seems to be conflicting opinions on the whole raw vs cooked debate. I found one site that gave me fair warning:

Is it safe to eat raw potatoes?
Yes, raw potatoes are not toxic, with the exception of the green parts. These may contain toxic levels of solanin. Raw potatoes, however, may cause flatulence in many people.

A LOT of vegetables have theirt nutrients released when cooked.
Carrots, for example, after being cooked were the breakthrough for the caveman, made changes in his brain.
