Sounds good. A mom & pop Dave and Buster's could be pretty chill. If it's your passion, go for it. Just be ready for all the headaches that come with brick and mortar business + alcohol and food. All restaurateurs I know personally in NJ are struggling and losing money everyday. Just try not to get into a position where you start sacrificing the quality you started with in the beginning in order to make ends meet. I've seen too many restaurants close (managed restaurants for about 20 years) when they started making their portions smaller, items slightly more costly to the customer (adding a few cents/dollars here and there), and buying lower quality supplies and food. Regulars will definitely notice. You'll come into work everyday and you won't be happy.
If it's really your true passion, then definitely do it. Entrepreneurs should never be dissuaded no matter what the odds are against him. However, if your goal is to make money or be financially free or work your way to some sort of passive income, consider a non-mortar business as well that's highly scalable (tech startup or app, contract work where you don't do the work yourself but hire subcontractors, some kind of catering biz in which the ghost kitchen you use is minimal in cost compared to a full restaurant, etc). Maybe look into some kind of "house event game room pub" catered to clients' homes. Just thinking out loud.
WIsh you lots of luck either way. If you go the brick and mortar route, I'd recommend spending every waking moment with the branding and marketing of your biz. Solicit reviews non-stop. Make connections. Offer deals. Create social media content, but not the kind that only gets 10 likes per post. Keep the interest high so that people don't get bored and end up going back to Dave & Buster's.
