you should not delete facebook, facebook is the future in this world, everyone is on it, it is good to connect and it will allow you to know more about the potential girl you are interested in. however to avoid killing mystery you should TWEAK YOUR PRIVACY SETTINGS, no need to delete, just be smart about what you want them to see, and how much you want them to see. in this article I will write the kind of things you should be careful about.
1) tag pictures, I suggest you make tag pictures only visible to you and not your friends. first of all, if someone tags an embarrassing picture of you, it will not immediatly pop in your girl's face the second she turns on her computer, and if you are tagged in a nice picture, you can always save it on your computer and upload it to your albums. second reason is, you don't want people to know what you have been up to all the time, so you go partying at night or go to a lunch, 5 min after you return, your whole day is publicly visible on facebook. that definetly kills mystery.
2) make groups invisible to everyone(in the application settings, set the visibility to "only me" ) groups contain your favorite actors, political views, job, interests, hobbies etc... for many people it sums up their life, do everyone a favor, keep them hidden, next time you meet people you will be able to slip a couple of words without gettign a "yeah I know I saw it on your facebook" and keep your fan pages to a minimum, fan pages cannot be hidden(not yet at least)
3) hobbies, favorite quotes, favorite people etc... don't mention them
4)back to photos, make one folder visible to people and keep the rest hidden, in that folder, put a few pics of you in social places, don't display your whole life for everyone to see.
5)don't make a new status message every few hours, change your status message once a week, appear to be too busy to browse facebook even if you actually have the page open in front of you 24/7
6) the relationship status thingy, I don't like to set it to anything, many people set it to single, and then once they are in a relationship they mention it, and when they break up they change it again, I am not sure if this affects any new girl you are going to meet, but personally I don't want girls I know from far back and people to keep track of where I am emotionally
a word on messenger, appear invisible often except for one hour a day max, let people miss you, make yourself scarce, don't be online a lot, it shows you have nothing to do
