The last relationship I had, things went slowly downhill after I said "I love you," like her story ended, she was satisfied and didn't need anything else. So how do you give her episode 2 or an extended play or whatever?

Don't say "I love you" before she does. That's all.
She has to build her romantic story by herself. It's not your job.
