Is this how I should be gaining mass?

I realise my gains are tapering off so I decided to check on the days I gain mass. It seems that I only gain weight on days I workout and gains on non-workout days, is this normal or am I doing something wrong? I'm posting my diet for critique on how I can continue gaining 1lb/week.

Breakfast: 4 Eggs + 1 cup oatmeal + 1 Banana

Lunch (2hrs after breakfast): 0.5lbs chicken + 1 cup rice

Meal 3: Almond Butter Sandwich + 1 cup nuts

Dinner: 0.5lbs chicken/fish/pork + 1 cup rice + 2 servings of veg

Meal 5: 500ml GNC Mass gainer (1/2 scoop) mixed with milk.

I also drink half a gallon of milk (1400cal) per day. Anymore than that I start having the runs. I also drink this shake post workout and 1 banana as well.

Advice or tips will be appreciated

1a. Eat more.

1b. Don't count "mass gainer" or any supplement as a meal.

2. Weight yourself once a fortnight, not every day.

I agree with Jitterbug.

As a more concise suggestion, I'd add 3-4 more eggs to the Almond butter sandwich.

Thanks for the advice guys, I'll be making the above mentioned adjustments to my diet and lets see how it turns out.
