Ok I really love to use the "stop when it's fun to keep her wanting more" DJ technique... but sometimes when she askes - 'hey why did you stop? it was sooo good' - what do I say? Are you talking about stopping during foreplay?

Most women like for their guys to be dominating in bed. Part of being dominated is her acknowledging your control of the situation. The things you can say are endless, but should remind her that you are in control. If she asks why you are stopping, say something like:

"Shhhh, I'm teasing you"

"I don't think you want it bad enough"

"I'm going to tease you so bad you'll be begging for it"

"You don't seem interested, maybe I should leave" (then pretend to get ready to leave) "Hmmmm I guess I could stay" (look at your watch) "but only if you beg me properly"

But of course. Never promise anything you can't deliver. In some ways it's a self fufilling prophecy. You're getting her so worked up she's like a ticking time bomb.
