Just because a woman listens to you and acts interested in what you say doesn't mean she really is. She might just be acting polite, while silently wishing that the date would hurry up and end, or that you would go away... and never come back.

OK, either she thinks YOU'RE COOL and wants to spend time with you, BE YOUR FRIEND. Or she's interested. Either way, she's got a boyfriend so she's at most a friend.

I think the girl I liked is trying to hook me up with one of her friends. When the three of us are together, she always jokes about it. We play fight a lot and its fun and all. Would arbitrarily "going-out" with her friend make me lose my interest in the first girl? I think that sort of thing made me obsessed with her in the first place.
