Should my diet be different on workout days compared to non-workout days? If so how?

I don't think the diet should be different. If you're working out consistently, you need the protein and nutrient on your off days as well. If you're bulking, your body grows outside of the gym, when you're resting.

Keep the same diet on workout & nonworkout days (except for your pre & post workout meals). Your body is still recovering, so you need to supply it with nutrients.
