For those of you that have been to Cancun recently, what are the best places to hit up? I've never been and I'm going with my GF, so even some couple activities would be cool...

Haven't been, but Mexico's got crazy problems right now. The tourist areas like Cancun are probably safe enough, but just so you know.
Might also want to look into Vegas which is dirt cheap right now, or if you're not 21, Puerto Rico--only place in the US where the drinking age is 18.

I went to Playa del Carmen with friends and we swam through a cave with wet suits on and spelunkers helmets. It is fairly cheap and something you could never do in the states. The pictures are deceiving as the majority of the time the only light is coming from your helmet lights and the guides flashlight but I would advise checking this out.

** And by the way I went recently so believe me when i say in this part of Mexico there is no trouble with violence or swine flu. If anything those two problems just made everything cheaper.

La Boom! Cancun rocks all the time and is almost all geared towards tourism. I plan on going on a cruise there in the winter during slow season.
My question is why you bringin your girlfrind? That's like bringing sand to the beach as the saying goes!
