Record all her texts/messages and go to the cops. Show her behaviour openly and how she is harassing you and this way if she does try to file a faken assault charge the police will already have a file on her

I went through a really similar thing recently with a girl. We went on a date then she came back to my place. During sex she said 'i love you', twice LOL, this is when the warning sirens came on. Anyway the day after she started doing all the same stuff you are experiencing. In the end I told her that her behaviour is abnormal and its clear she has some serious issues. I also told her that she is trouble, and that this stops right here before it gets out of hand.
