Women call me "cold".

I had these two women call me "frío" in Spanish in
the last few weeks. They are both latinas, and "frío" really translates to cold or aloof. What's up with that? How do I respond to this? I am really not all that interested in these two, but one (my former plate) seems to dig it.

I think that when they directly call you "cold", you're too far in that direction. Better that they speculate because they see both coldness and warmness in you. This is what keeps them intrigued.

Being a bit cold and distant is good, it gives them the chance to chase a little, which is something they love, but, like Gambino said: "You should find a balance", as it is possible to lose a girl for being too distant.

Found an interesting blog from a self-confessed aloof guy. Hasn't been updated much recently, but there are plenty of great comments from a few years back. Guy writes really well and touches on a lot of topics that get recycled on this forum.
