Anything that takes away my sex drive makes me happy, but when my sex drive is strong I'm very, very unhappy (depressed in a bored, frustrated, sad/gloomy way).

Caffeine = happiness
Opiate/opioid = happiness

"Sober" and bored = jacking off 5+ times and depressed

I feel like I need sex like I need food/water, and it's "killing" me when I don't get it as much as I want.

It's a subconscious thing. I can't control it. My happiness seems to be linked to the sex and female attention I get. To put it into perspective, if I was as passionate about making money or furthering my career as I am about getting laid I'd probably be a millionaire (or close to it) or at the very LEAST extremely successful career wise. That might be a slight exaggeration, but I'm sure you get me.

I would absolutely love to know where this stems from and/or why. Any psychologists on here? Lmao.

It's just an addiction. That's a bit broscience article, but the point is clear. If you want to learn more, read about dopamine and how it affects our brians. It works the same with sex/fap and drugs and pretty much everything we do.
I've had a same issue before, this unhealthy desire for sex without any emotions involved, just that "itch". What helped me is abstention, it works with any kind of addiction.

I've been there man. Hell most guys probably have and just wont admit it. Especially the beating off part. Years ago when I was in my early 20s, I decided to get off of caffeine entirely, which at the time was mainly because I was drinking sodas. So I cut out stuff like Dr. pepper and drank only non-caffeinated stuff like some root beers or sprite. Another year went by and I decided to stop drinking all soda. I actually managed to do it no problem. I can count on 1 (maybe 2) hands the number of times I've drunk a soda since then. I honestly dont miss it. I just drink water instead or if I want something else I usually go for lemonade. Lemonade though accounts for about 2% of all the liquids I drink... 1% being juice in the morning, the other 97% is just water. That's it.

Now my point here is that sometimes it can be hard to get rid of some bad habits. In my above example, this wasn't really difficult for me. What was a little more difficult was stopping watching porn on occasion. Probably my heaviest times of watching porn was maybe a total of 15 minutes total per week. I decided to stop doing even that. I did say that if I wanted to beat off, that was fine, but no porn. The first few days were trying, but the urge really did go away, and so did my urge to fap. Anytime the wife wanted sex though it was on and I found myself making more of an effort to initiate sex with her.

A lot of it really is willpower. We often condition our minds a certain way and end up fooling ourselves to a certain extent thinking that the way we used to do things (watch porn, fap, etc) was normal and this "new" way is not. Keep trying.
