Actually, I've noticed that I would get more women the first few months of a new relationship after being single for a long ass time - 6 months to 1 year. Chicks would be knocking down the door and I had to tell them that I was taken.
However, after a while, girls seem to be able to read which guys are in LTR's and which aren't - so there is a catch-22 if you stay in the relationship too long.

Chewy you do have a point ... sometimes you can just smell "girlfriend" all over a guy... I was talking to a guy at a bar once and one of his friends let slip that he had a girlfriend and I wasn't at all surprised. He was like "oh no we're not together right now" and I was like "come on... let's be serious, you have girlfriend written all over you..." It's not always something you can put your finger on, sometimes it's just a vibe. He finally did admit to me that they WERE still together (for 6 years!) I knew it.
Not sure if all women want what they can't have. It seems like it's one of those things that depends on how a girl was brought up. If she was spoiled when she was brought up, she would likely be more inclined to want what she can't have. However, a more humble upbringing may make her a little more likely to understand that she can't have everything.
I know that I dont' go after a girl just because I can't have her. It depends on whether I'm even attracted to her to begin with. Her being less available does not increase my attraction if it wasn't there initially.

When guys are in relationships already - they're much more confident with women.. Women like naturally created confidence.. They can detect it a mile away. When they see you with your gal, they kinda jump all over you .. and this is self explanatory.
From my limited experience, every time I was in a relationship, I was naturally more self-assured and could care less about what other girls thought about me. Indifference is your strongest weapon, even stronger than confidence. Simply going on a date with another female can get you attention. On my last blind date, two cute blondes were staring me down the whole night, but I didn't care about them, in fact, I was slightly annoyed. However, when my relationships ended, I was back in desperate / approval-seeking mode, and we all know what effect that has on the ladies.

It boils dow to three key factors, confidence, calmness/coolness, social status (It is not always the case of "women wanting what they cant have". It's more like eveyone (male/female) wants a hot and approved property, social status is self advertisement).

I think it is mainly the change in your body language (however subtle) and the different attitude you project.
I can definitely sense a change in myself when I know I have a chick that would jump off a bridge to be with me. It pretty much eradicates and kind of self doubt you have about yourself being able to attract a honey because you are too old, too fat, or (fill in reason here).
YOU KNOW you got something that one chick wants, and you are projecting that attitude to the world. You know that if one girl wants you that badly there are surely plenty of others that feel or could be made to feel the same way. It is too easy to fall into the trap of getting down on yourself when you have no prospects.
In a nutshell, you are being more real and have less hangups when you are getting some. Both attractive qualities.
But I still think there is something to them being able to pick up the scent.......
